New Year's Resolution

I am not typically one to make New Year's Resolutions. However, I decided to make one this year. In fact, I just decided yesterday what it would be. Are you ready?

Here goes:

I will try this year to be better about planning dinner, and cooking dinner, and incorporating vegetables in my dinners. I will try to have a nice meal on the table when Brian gets home from work.

In the past, I have been kind of a slacker about dinner. I am a bit disorganized with what we will be eating, and sometimes we all have been known to eat cereal for dinner. Bad mommy. Bad wife. Bad, bad, Bridget.

I know. We all have nights when we slack off. But - it seems that I have been a slacker for a while. I guess you could blame it on the pregnancy. I was just too tired to cook. Luckily, I have a husband who is competent in the kitchen. He cooked many meals during the pregnancy. In fact, he cooked MOST of them. He is a master at chicken parm and he makes a mean omelette. He also has a special gift for creating "something" out of "nothing." You know - if we have NOTHING to eat - he somehow manufactures this magnifcent meal with what is left in the cabinets. He is good like that.

So - now it's my turn. I am on maternity leave and there is no excuse for me NOT to cook dinner. So - I am going to try really hard to have some nice meals prepared and created when he walks in the door.

I am off to a good start. Already this week, I made Beef Carbonnade. This was great - because it fed us for 2 days! Tonight I am preparing Cranberry Sauce Pork Chops. I even have meals lined up for the next few days. We will be having homemade mac and cheese, beef stew and tortellini soup.

Wish me luck with my New Year's Resolution. Let's see if I can keep this going.
